The Peachy Keen

A soft and refreshing summery Gin Cocktail

Sweet, sweet seasonal peaches are the hero of this delicious fresh cocktail! So simple to make and perfect for a warm afternoon in the sun! Enjoy with bite-sized canapes or a light meal.

Peachy Keen Cocktail

Prep Time: 5 minutes
Serves: 4

3 Ripe White Peaches
160ml good quality Gin
6 sprigs of fresh Rosemary
1ltr Tonic Water
A cocktail shaker
A muddler
1. Slice peaches into thin wedges. The remaining peaches can be roughly cut into smaller pieces for muddling
2. In your cocktail shaker muddle the roughly cut peach pieces along with 2 of the Rosemary sprigs. Add a small scoop of ice and the Gin, and gently shake for 30 seconds.
3. Strain Peach/Gin mixture evenly across 4 cocktail glasses, top with Tonic water and garnish with a sprig of Rosemary.
